How to Purchase and Prepare Mussels

Mussels have blue-black shells which should be tightly closed when purchased. They are opened with a knife like clams or steamed open. When opened remove black tuft known as beard. They are cooked like oysters or clams.

To steam open: scrub shells, put in small amount of water and steam until shells open. Allow liquor to cool and strain through cheese cloth.
