Oyster Sauce

1 pt. oysters
1 qt. sweet milk
2 tbsp. butter
1 tsp. salt
½ tsp. pepper

1. Heat the oysters in their liquid until they curl.
2. In a double boiler, heat the quart of milk with seasonings.
3. When ready to serve, combine the oysters and hot milk.

Broiled Smoked Mullet

4 pounds of mullet
Butter

1. Freshen in cold water for one hour if necessary.
2. Drain, dry and sprinkle well with butter or cooking oil.
3. Preheat broiler to right temperature.
4. Place on rack, flesh side up.
5. Broil five minutes.
6. Turn long enought to heat other sides thoroughly.
7. Serve with lemon slices or butter and pepper.
